From the kitchens of Virgilio Martinez has created a pool of talents that seek to explore new territories and consolidate its philosophy outside Peruvian borders. Olluco is the result of our intention to go out, to look for more, to innovate with new and spectacular ingredients in quality and origin.

Olluco restaurant presents a new gastronomic experience that Virgilio Martinez and his team have created in conjunction with Mater and its values.

Virgilio's cuisine in Peru is characterised by showcasing the biodiversity of the territory and works under the premise that "Outside there is more" (Motto of Mater). Thus, Olluco is the realization of a dream of expansion - outside the South American borders, which represents the beginning of a process of searching for knowledge, and of finding similarities between two distant territories, which in products, come closer.

Virgilio Martinez is one of the best chefs in the world, who is internationally recognized and who has won the hearts of many fans on all continents. In his work, he relies on the amazing nature of Peru and uses truly unique products in the kitchen.

Virgilio counts on Mater as a source of information and inspiration for the creation and development of all the group's gastronomic concepts.

Nicanor Vieyra

Nicanor Vieyra, has been the right hand of Virgilio at Central Restaurant for over 6 years, leading the team has reached top 5 restaurants of the world.

Known by this charismatic leadership and gastronomic talent, Nicanor has earned the respect of his colleagues and Virgilio for his curiosity and desire for continuous development.

Now, head chef of Olluco, Nicanor aims to expand the philosophy of Mater by sharing and learning with a new community.

Winner of a large number of professional competitions in Russia and abroad. An active traveler, he has visited more than 20 countries with master classes and guest bartendings.
